Tree sap?

I've wanted to collect/taste birch and maple sap for a very long time, but when, I've tried in spring, but no luck, con someone tell me when these trees run:

Sycamore Maple

Field Maple

Birches

im sure the birches are march to april,but make sure you make a wedge or a plug to put into the hole you create,because they carry on leaking,unsure on the other trees as ive only tapped birch

I watched that yesterday, I watch tons of bushcraft videos on youtube, but I don;t see why I shouldn't watch it again :)
