Here's a very useful book by Ray Tabor. It's called the Encyclopedia of Green Woodworking
It covers a huge range of subjects from the types of wood that are most suitable for different tasks, pole lathes, shave horses, charcoal making, you name it and it's probably in there
It's one of the most useful books that I have and I can heartily recommend it you
