Tree Tapping.

Had a short walk today through a couple of local woods. Checked a couple of trees for sap.
First one, a large Birch did not run, but there was sap on the knife when I withdrew it. One to try a little later.
The second was a Sycamore after a little while a few drops of sap ran down the blade and down the trunk.
Very slow, but bodes well for another try I reckon.

I had to fell an Ash this week that was about 2ft across and in the centre was a circle of sap about the size of a coffee cup. Time to stop felling pretty soon!

It's the first two weeks of March, when the birch sap is rising. It tastes delicious :)

As for a north/south devide thing, it depends on how high above see level you are (mostly). The higher you are, the nearer to the end of those two weeks it'll be.

haha. I know at 500-600m in Devon, it starts toward the end of the first week, at 150-200m (where I am) it's pretty much right at the biginning of the first week, so oop your way (about 750-800m, I think) it should be within the first couple days of the second week, maybe slightly delayed. I'd checkon the weekend of the 10th-11th, should hit some sap then. :)

Hey there, I just tapped a birch tree today for my first time. It's a really interesting flavour, nice and fresh too.
Also there was a larch tree right next to it, so I've collected some buds and am drying them out to make tea.
But they taste great raw, sort of a minty/citrus flavour :)

Birch sap is like a fast running tap here. I went out on Sunday and got a litre in 45mins !!

It is really surprising how late the sap is rising....no rhyme intended :)
