Hi all. I did post this before but I think its in the wrong section so....

Im looking to make a smoker for fish. I find freezing then defrosting fish changes the taste and I do prefer smoked fish. Just like your views on how to make an efficient smoker. :)

All depends what you want to do mate, whether its hot smoking or cold.

No matter what though, they are very easy to make. Give us an idea on what else you plan to smoke.

Just planning to smoke mackerel fillets for next season. Always in good supply and I like the idea of smoking some instead of the freezer...then im not 100% sure how long it'll last once smoked? what are the difference between hot/cold smokes? I assume the hot smoke will dry the fish and make it last longer?

Hot smoking typically cooks the product being smoked but at a low temperature when compared to a regular oven (90-120 Deg.C). Cold smoking uses smoke at a temperature which doesn't get above ambient 20 Deg.C. It is typical to cure meat/fish before cold smoking so as to draw out the moisture in which bacteria can thrive. You could try pickling some as well.

Thanks for info guys! Ive just ordered the River Cottage Handbook on curing and smoking..........should cover it all I imagine :)

Those River Cottage books are very good. There are some similar books by Dick and James Strawbridge that were being sold cheap in Aldi that are OK.
